Yields one large bowl

Preparation time: About an hour

Ingredients:

• 6 tomatoes (de-pulped and chopped)

• 6 scallions (chopped)

• 4 - 6 avocados

• 1⁄2 red onion (chopped)

• 1 can Mexi/fiesta corn (drained)

• 1 can black beans (rinsed and drained)

• One batch of cilantro (chopped)

• 1 package dry Italian Seasoning (Good Seasons)

• 1 teaspoon salt

• 1⁄3 cup red wine vinegar • 1⁄8 cup olive oil

• 1 lime

• Tostitos Scoops

Directions:

  1. In a mixing large bowl:

• Combine chopped tomatoes, scallions, red onion, cilantro, drained beans and corn. Mix in - gently - olive oil, red wine vinegar, salt, and seasoning

• Right before serving, chop the avocados, and in a separate bowl, mix the chopped avocados with the lime

• Add to other ingredients and mix gently.
