Crust ingredients:

• 1 1⁄4 cups all-purpose flour

• 1 stick salted butter - divide into pats

• 1⁄8 cup ice water (more if needed)

Filling ingredients:

• 7 medium Granny Smith apples - peeled, cored and thinly striped

• 1⁄2 cup sugar

• 1 teaspoon cinnamon

• 1⁄4 teaspoon ground nutmeg

Topping ingredients:

• 3⁄4 cups firmly packed dark brown sugar

• 3⁄4 cups all-purpose flour

• 1⁄2 teaspoon ground nutmeg

• 1⁄2 cup softened butter - divide into pats

Tools:

• Food processor

• Parchment paper

• Ziploc bags

• 9 inch pie plate

• 1 baking sheet

Directions:

  1. Preheat oven to 400 degrees

  2. In a food processor, combine the flour and butter for approximately 20 seconds; butter should break up

  3. Add ice water slowly into the tube slow until the dough holds – no more than 1 minute

  4. On parchment paper, shape dough into flattened disks and place in a Ziploc bags and refrigerate until cold – 30 to 60 minutes

  5. Combine all the filling ingredients and let stand for at least 15 minutes

  6. Prepare the topping

• In a separate bowl, mix together the brown sugar, flour and nutmeg

• Add butter by hand and form small crumbs

  1. Remove chilled dough and roll out crust and trim to fit the pie pan; flute edge

  2. Add filling and sprinkle topping evenly over filling

  3. Place pie on baking sheet and bake for 45-50 minutes – until juice bubbles begin to burst slowly

Note:

• Smokehouse or Delicious apples can be substituted if Granny Smith apples are unavailable
