Lobster Roll
Serves 4
Preparation time: 20 minutes
Refrigeration time: at least 2 hours
Frying time: 10 minutes
Ingredients:
• 3 cups diced lobster meat
• 1⁄4 cup vinaigrette dressing (bottled or Noni’s)
• 1⁄2 cup finely diced celery
• 1⁄2 cup mayonnaise
• 1⁄2 cup fresh cilantro - chopped
• 2 tablespoons unsalted butter
• 4 top-spilt hot dog rolls
Tools:
• Large fry pan/skillet
Directions:

In a bowl, toss the lobster meat with the dressing and refrigerate for at least 2 hours

Drain the chilled lobster and discard the dressing

Add the celery, mayonnaise and cilantro and stir to combine – add more mayonnaise if needed to moisten well. Season to taste

Melt the butter in the fry pan and place the rolls in the butter – cut sides down and toast over medium heat – turn once until browned on both edges

Fill with lobster and serve immediately.
