Serves 4-6

Preparation time: 30 minutes

Refrigeration time: at least 2 hours

Lobster ingredients:

• 3 cups of diced lobster meat

• 1⁄4 cup vinaigrette dressing (see Noni’s recipe)

• 1⁄2 cup finely diced celery

• 1⁄2 cup fresh cilantro - chopped

• 1 each orange and red pepper - diced

• 1 cup of lettuce - chopped

• Soft tacos, small size

Boulders Sauce ingredients:

• 1 cup Crème Fraiche

• 1 cup buttermilk

• 1⁄2 cup cilantro - chopped

• 5 tablespoons cumin

• Salt

• Pepper

• 1 teaspoon garlic powder

• 1⁄4 cup bacon bits - best quality

Directions:

  1. Prepare lobster using Noni’s lobster roll recipe - omit the mayonnaise and rolls

  2. Combine the remaining lobster ingredients with the lobster meat

  3. Make Boulders Sauce by combining all of the ingredients indicated

  4. Add 3⁄4 of the Boulders Sauce to the lobster meat and mix

  5. Heat tacos for 10 seconds on each side in a hot skillet

  6. Create separate bowls for the lobster, lettuce, peppers and remaining 1⁄4 of Boulders sauce and allow diners to make their own tacos
