Dave’s Margarita Beef with Orange Salsa

Preparation time: 1 hour
Chilling time: marinade 4-24 hours; salsa 1 hour
Grilling time: 25 minutes
Ingredients - beef:
• 1 1⁄2 pound well-trimmed boneless top round steak
• 2⁄3 cup frozen orange juice concentrate - thawed
• 1⁄2 cup Patron tequila
• 1⁄3 cup fresh lime juice
• 2 tablespoons olive oil
• 2 tables fresh ginger - chopped
• 2 medium garlic cloves - crush
• 1 teaspoon each: salt and dried oregano
• 1⁄4 teaspoon ground RED pepper
• Dash of cilantro and lime juice for garnish
Ingredients - salsa:
• 2 oranges - peeled and cut into 1⁄2” pieces
• 1 small red onion - chopped
• 1 jalapeno pepper - seeded and finely chopped
• 1⁄4 cup chopped fresh cilantro
• 2-3 tablespoons fresh lime juice
• 2 tablespoons olive oil
• 1⁄2 teaspoon each: sale and dried oregano
Preparation - beef:

In a large bowl, combine all of the ingredients - except the beef - to create the marinade. Mix thoroughly

Place the beef in a plastic bag, add marinade, turn to coat

Marinade a minimum of 4 hours; ideally, overnight

Prepare the orange salsa

Remove the steak from the bag and discard excess marinade

Place steak on grill over medium heat and grill for 22 to 26 minutes (medium rare/medium). Turn steak once during grilling

Carve steak crosswise and garnish with cilantro and lime. Serve with orange salsa
Preparation - salsa:
- Combine all ingredients in a non-metallic bowl and refrigerate for at least an hour
