Serves 10-12

Preparation time: 15 minutes plus grilling

Marinating time: overnight


• 4 each: chicken legs, thighs and halved breasts

• 1 cup olive oil

• 1 cup lemon juice

• 1⁄4 cup fresh Italian parsley - chopped

• Garlic powder, salt and pepper to taste


  1. Divide the uncooked chicken - legs/thighs and breasts - and place each in a Ziploc

  2. Combine all of the other ingredients and pour evenly into each Ziploc and marinate overnight

  3. Bake or grill chicken - grilling is the preferred option
