Baking time: 25-35 minutes

Ingredients:

• 5-7 pound beef tenderloin - trimmed

• 3 tablespoons butter - softened

• 5-7 teaspoons kosher salt

• 3⁄4 teaspoon cracked black pepper

Tools:

• Wire rack

• Jelly-roll pan

• Meat thermometer

• Aluminum foil

Directions:

  1. Preheat oven to 425 degrees

  2. Place beef on a wire rack in a jelly-roll pan

  3. Rub butter over beef and sprinkle with salt and pepper

  4. Bake for 25-35 minutes or until a meat thermometer inserted into thickest portion registers 135 degrees (medium rare)

  5. Cover loosely with aluminum foil

  6. Let stand 15 minutes before slicing
