Pollo Mexicano

Baking Time: 1 hour
Ingredients
• 2 pounds chicken breast – cut/chunked
• 2 packages round T ostitos (not scoops)
• 1 package Monterey Jack cheese
• 1 can Cream of Mushroom soup
• 1 can Cream of Chicken soup
• 1 can chopped green chilies
• 1 jar medium salsa
• 1⁄2 cup whole milk
• 1 can chili without beans
• 1 teaspoon chili powder
• 1 teaspoon Mexican oregano
• Salt to taste
• Cumin to taste
Tools:
• 9 x 12 casserole dish
Directions:

Preheat oven to 300 degrees

Prepare chicken as done in Rob’s Curried Chicken recipe

Combine the soups, milk, all chili products, salsa and oregano in a large mixing bowl

Layer 2 times: tortillas, chicken, sauce and cheese

Bake uncovered in a greased casserole dish for 1 hour
