Yields 1 cup

Preparation time: 20 minutes

Ingredients:

• 1 red onion - slice VERY thinly

• 1 clove garlic - minced (about 1 tablespoon)

• 1 1⁄2 teaspoons olive oil

• 1 tablespoon fresh basil - chiffonade

• 1 tablespoon fresh parsley - chiffonade

• Kosher salt

• Black pepper

Directions:

  1. In a small container with a lid, combine all of the ingredients and mix well

  2. Season to taste with salt and pepper

  3. Put the top on the container and refrigerate. May be made ahead and will keep for up to one week
