Serves 6

Preparation time: 1 hour

Baking time: 35 - 45 minutes

Ingredients:

• 6 ounces - angel hair spaghetti (or 8 ounces of linguini)

• 2 tablespoons butter

• 1⁄2 cup grated fresh Parmesan cheese

• 2 well beaten eggs

• 1 teaspoon garlic powder

• 1⁄2 pound each ground beef and pork sausage (or mix of beef/pork/veal)

• 1 cup chopped onion

• 2-28 ounce cans diced tomatoes - San Marzano brand if possible

• 6 ounce can tomato paste

• 5 pressed garlic cloves

• 1 teaspoon sugar

• 1 tablespoon dried oregano - crushed

• 2 tablespoons basil

• 2 tablespoons parsley

• 1 teaspoon smoked paprika

• Dash of cayenne pepper

• 1 cup cottage cheese

• 1 cup shredded mozzarella cheese

Tools:

• 2-10 inch pie plates

Directions:

  1. Preheat the oven to 350 degrees

  2. Butter the pie plates

  3. Prepare crust:

• Cook and drain the spaghetti, then:

• Stir butter into the spaghetti

• Stir Parmesan, garlic powder and eggs into the spaghetti

• Form the mixture into a thin crust in the pie plate

  1. Prepare filling:

a. In a skillet, cook onions and garlic until tender; add meat and brown

b. Stir in: un-drained tomatoes, tomato paste, sugar, and spices

c. Cook sauce over a low heat until sauce has thickened

  1. Spread enough cottage cheese to cover the spaghetti crust; may use more than 1⁄2 cup

  2. Add filling and bake for 30 minutes

  3. Sprinkle with Mozzarella and bake 10 minutes longer or until the Mozzarella is browned
