Toasted Orzo with Peas
Serves: 10-12
Preparation time: 60 minutes
Ingredients:
• 1 pound orzo pasta
• 1 cup onions - finely chopped
• 3 1⁄2 cups of chicken broth
• 1 3⁄4 cup frozen peas - thawed
• 1 cup parmesan cheese
• 1 teaspoon salt
• 2 garlic cloves - minced

• Large skillet
Directions:

Heat the butter in the skillet until it is coated

Add the garlic and onion and sauté until soft. Do not brown!

Add the uncooked orzo; stir until the orzo is fully coated and keep on low heat until the orzo begins to lightly brown

Add chicken broth and stir

Bring to a boil and then reduce heat to a simmer; simmer for about 10-15 minutes or until broth has been fully absorbed

Remove from heat and add: peas, cheese and pepper to taste; the peas should heat through within 5 minutes
