Serves: 10-12

Preparation time: 60 minutes


• 1 pound orzo pasta

• 1 cup onions - finely chopped

• 3 1⁄2 cups of chicken broth

• 1 3⁄4 cup frozen peas - thawed

• 1 cup parmesan cheese

• 1 teaspoon salt

• 2 garlic cloves - minced


• Large skillet


  1. Heat the butter in the skillet until it is coated

  2. Add the garlic and onion and sauté until soft. Do not brown!

  3. Add the uncooked orzo; stir until the orzo is fully coated and keep on low heat until the orzo begins to lightly brown

  4. Add chicken broth and stir

  5. Bring to a boil and then reduce heat to a simmer; simmer for about 10-15 minutes or until broth has been fully absorbed

  6. Remove from heat and add: peas, cheese and pepper to taste; the peas should heat through within 5 minutes
