Yields one large serving bowl

Preparation time: 45 minutes

Refrigeration Time: Until ready to serve


• 1 box spiral colored pasta

• 1 large Ken’s Northern Light Italian dressing

• 1 bag shredded cheese - preference for colby, Monterey Jack or cheddar

• Parmesan cheese - optional

• 1 small can sliced black olives

• 1 package round salami - or any other preferred sliced meat

• 2 bunches scallions - chopped

• 1 small carton mini tomatoes - sliced in halves or thirds

• 1 bunch broccoli

• Salt, pepper and Mrs. Dash


  1. Cook, drain and cool the pasta and broccoli

  2. Slice the meat; then halve the slices and separate to ensure none “stick together”

  3. In a large mixing bowl, combine and toss together all ingredients except dressing and spices

  4. Add: spices and dressing to taste

  5. Refrigerate until ready to serve (add more Italian dressing to taste)
