Spicy Black Bean Salad
Preparation time: 20 minutes
Refrigeration Time: 2 hours
Ingredients:
• 1 can premium quality black beans - drained and rinsed
• 1⁄4 cup finely chopped red onion
• 1 small jalapeno - seeded, finely minced
• Cooked corn kernels from 1 ear of corn (see note)
• 1 cup chopped tomato (juicy seeds removed)
• 1⁄2 cup extra virgin olive oil
• 1 cup fresh lime juice (8-10 limes) • 1⁄3 cup coarsely chopped fresh cilantro
• 1⁄2 teaspoon salt
Directions:

In a large serving bowl, mix: beans, onions, jalapeno and corn

In a smaller bowl, mix and stir well: lime juice, olive oil, cilantro and salt

Pour lime juice mixture over beans and toss well

Chill for 2 hours before serving
Note:
Corn can be substituted with 1⁄4 cup of finely chopped celery
