"Battle Run" Cauliflower Bake
Serves 4-6 people
Preparation time: 60 minutes
Ingredients:
• 2 heads cauliflower - cut-up and boiled in salt water until soft
• 1⁄2 cup heavy cream
• 1 1⁄2 cups grated Gruyere cheese – reserve some for the top of the casserole (can be substituted for another preferred cheese)
• 1⁄4 cup panko breadcrumbs
• 5 tablespoons butter
• 2 tablespoons butter
• Salt and pepper to taste

Directions:

Preheat oven to 400 degrees

Fry bread crumbs in a frying pan, add 2 tablespoons of butter and toast

Boil the cauliflower, drain, and puree in the food processor

Add pureed cauliflower to cream, cheese, 5 tablespoons of butter and salt (lots) and pepper to taste

Spread reserved cheese on top and add the toasted breadcrumbs and until bubbling and slightly brown
