Yields one casserole dish

Preparation time: 30 minutes

Baking time: 60 minutes

Ingredients:

• 2-3 long, skinny russet potatoes - peeled

• 1 1⁄2 cups shredded cheddar cheese

• 1 1⁄2 cups milk

• 2 tablespoons flour

• 3 tablespoons butter

• Salt and pepper

Tools:

• Mandolin (paring knife can also be used)

• 8 or 9 inch casserole dish

Directions – 3 layers

  1. Preheat oven to 350 degrees

  2. Use a mandolin to slice the potatoes very thin

  3. Layer 1:

• Place a generous layer of potatoes in the casserole dish

• Sprinkle with 1 tablespoon flour

• Dot with 1 tablespoon butter

• Salt and pepper

• 1⁄2 cup shredded cheddar cheese

• 1⁄2 cup milk

  1. Layer 2 - repeat layer 1

  2. Layer 3 - same as layer 1, but omit flour. The cumulative milk should come up to, but not cover, the 3rd layer

  3. Bake for an hour or until soft when tested with a fork
