Escalloped Potatoes
Yields one casserole dish
Preparation time: 30 minutes
Baking time: 60 minutes
Ingredients:
• 2-3 long, skinny russet potatoes - peeled
• 1 1⁄2 cups shredded cheddar cheese
• 1 1⁄2 cups milk
• 2 tablespoons flour
• 3 tablespoons butter
• Salt and pepper
Tools:
• Mandolin (paring knife can also be used)
• 8 or 9 inch casserole dish
Directions – 3 layers

Preheat oven to 350 degrees

Use a mandolin to slice the potatoes very thin

Layer 1:
• Place a generous layer of potatoes in the casserole dish
• Sprinkle with 1 tablespoon flour
• Dot with 1 tablespoon butter
• Salt and pepper
• 1⁄2 cup shredded cheddar cheese
• 1⁄2 cup milk

Layer 2 - repeat layer 1

Layer 3 - same as layer 1, but omit flour. The cumulative milk should come up to, but not cover, the 3rd layer

Bake for an hour or until soft when tested with a fork
