Yields 1 large serving bowl

Baking time: 40-45 minutes


• 2 bunches beets

• 2 tablespoons butter

• Olive oil

• Salt and pepper


• Aluminum foil

• Baking sheet


  1. Preheat oven to 350 degrees

  2. Clean beets and cut off tops and root ends - leaving a 1⁄2 inch at each end

  3. Place beets in tin foil making 1 packet per bunch

  4. Add: 1 tablespoon butter, olive oil, salt and pepper to each packet

  5. Create a packet by crimping the foil’s side and rolling the tops to seal

  6. Place on a baking sheet and bake for 40-45 minutes, until tender

  7. Cool slightly and slip skins off beets using a paper towel

  8. Serve with butter and season to taste
