Roasted Beets
Yields 1 large serving bowl
Preparation time: 10 minutes
Baking time: 40-45 minutes
Ingredients:
• 2 bunches beets
• 2 tablespoons butter
• Olive oil
• Salt and pepper
Tools:
• Aluminum foil
• Baking sheet
Directions:

Preheat oven to 350 degrees

Clean beets and cut off tops and root ends - leaving a 1⁄2 inch at each end

Place beets in tin foil making 1 packet per bunch

Add: 1 tablespoon butter, olive oil, salt and pepper to each packet

Create a packet by crimping the foil’s side and rolling the tops to seal

Place on a baking sheet and bake for 40-45 minutes, until tender

Cool slightly and slip skins off beets using a paper towel

Serve with butter and season to taste
